All the preparation for the trip can be hungry work. Although its a simple dish, I thought I would share the recipe for the mushrooms on toast that I prepared this morning. The maple syrup is the real hero in this recipe; I only really thought to use it as we are desperately trying to empty our shelves!

Ingredients
Cooking oil
Sesame oil (optional)
Paprika
Rock salt
Maple Syrup
Mushrooms
Red onion
Garlic
Black Pepper
Rosemary
Bread (for the toast!)
Method
Heat the cooking oil(s) at a medium heat. Add the paprika to the oil and fry off briefly, before adding the salt and maple syrup. Once mixed, add the garlic, mushrooms and red onion to the oil.
( I don’t tend to salt the oil… but it was an experiment to see if I could quickly pull the moisture out of the mushrooms, Ed.)
Let the veg fry on a medium heat; let the moisture pulled out of the mushrooms boil off and caramelise the mix slightly. The caramelisation is aided by the maple syrup.
Add a pinch of dried rosemary to the mix toward the end, and pepper to taste.
Toast a couple slices of bread, then butter the toast.
Add the mix on top of the toast.
Serve!
